Lemon (Citrus x Lemon): It is a small evergreen tree type continuing to grow yearlong and Lemons are the fruit of this tree. The motherland of the lemon is not exactly known. Cultivated forms of these small evergreen trees bearing essential oils are grown at all mild climate countries and the fruits are very popular in our country. There is a lemon tree present at almost every yard in Aegean and Mediterranean regions. The fruit is primarily used for its juice. Its pulp and rinds are used in cooking and baking. Lemon juice contains approximately 5% acid. The pH value is between 2 and 3. The juice is easily extracted and is used in scientific training experiments.
